Lacto fermentation is an ancient food preservation method that’s gaining popularity for its ability to enhance flavor and support gut health. But to ensure your ferments are safe and successful, getting the salt ratio right is crucial. 

In this guide, we’ll explain the science behind the lacto fermentation salt ratio, offer two easy methods (with and without a kitchen scale), and share tips for safely fermenting vegetables.

What is lacto fermentation and why Is salt important?


Lacto fermentation relies on beneficial bacteria (like Lactobacillus) to transform sugars into lactic acid, creating a tangy, preserved product. Salt plays a vital role in this process by:

  • Inhibiting harmful bacteria while beneficial bacteria thrive
  • Drawing out moisture from vegetables to create a natural brine
  • Enhancing flavor and texture of veggies

Without the correct salt ratio, your ferment may spoil or fail to develop the right flavor.

The ideal salt ratios for lacto fermentation of veggies

A key note here is to remember that on average salt weighs 6 grams per teaspoon. But remember, if your salt is more or less coarse, your weight will vary. This can result in too much salt, or not enough. 

  1. Dry Salt Method (Perfect for high water content foods, this method simply adds salt, no liquid):
    • Salt-to-vegetable ratio: 1.5–2% by weight of veggies
    • Example: For 2 pounds (32 ounces) of vegetables, use 0.5–0.6 ounces of salt (about 1½–2 teaspoons). Two pounds is what can typically fit into a quart sized jar (but again, this varies based on the density of your food choice). 
    • Steps:
      • Weigh your vegetables.
      • Measure out the correct amount of salt.
      • Massage the salt into the vegetables until they release enough liquid to submerge themselves. Alternatively, you can use a wooden spoon and do this in a glass bowl allowing “rest” time of 10 -15 minutes for the salt to draw out liquid.
  2. Brine Method (Great for fermented vegetables that need more liquid, salt is dissolved in added water):
    • Salt-to-water ratio: 5% by weight of water
    • Example: For 1 quart (32 ounces) of water, dissolve 1.6 ounces of salt (about 7 teaspoons).
    • Important Note: you will never fit 32 ounces of water in a quart along with your food! So measure your water without salt first. Then dissolve the salt, otherwise you’ll end up with too much salt! 
    • Steps:
      • Pour plain water over your food first to determine the amount of water that will fit along with the food. 
      • Then you may need to pour the water back out, measure it, then determine the amount of salt. I find I fit a cup or two of water in a quart along with my veggies. 
      • Pour the brine over your vegetables until they’re fully submerged.

What if you don’t have a kitchen scale?

If you don’t have a kitchen scale, use these approximate measurements:

  • Dry Salt Method: Use about 3 teaspoons (or 1 Tbsp) of salt in a quart sized ferment
  • Brine Method: Use about 2 tablespoons of salt in a quart sized ferment

While these measurements aren’t as precise as using a scale, they will work for most home fermenting projects.

Can I ferment without any salt?

Yes, you can. But honestly, I much prefer salt in my ferments. Salt slows down the fermentation process, inhibits the formation of bacteria and mold, slows the enzymes that digest pectins found in plants and softens textures. 

Therefore, if you choose to forgo salt, check your ferments daily, and reduce the fermentation time! 

Safety tips for lacto fermentation

  1. Keep Everything Submerged:
    Use a fermentation weight or clean jar to keep vegetables under the brine. Anything exposed to air can mold. If you don’t have traditional weights, check out my DIY Fermentation Weight Guide.
  2. Clean Equipment:
    Wash jars, utensils, and hands thoroughly to reduce contamination risk.
  3. Monitor Your Ferment:
    Check daily for bubbles, a sign of active fermentation, and skim off any surface mold or yeast if needed.
  4. Taste and Smell:
    A healthy ferment smells tangy, not rotten. Taste-test after a few days to track its progress.
  5. Store Properly:
    Once your ferment is to your liking, move the jar to the refrigerator to slow fermentation and preserve freshness. Each ferment keeps to varied time periods, but many will last for 3 months, up to nearly 12 months (like my favorite fermented lemons!)

Why lacto fermentation salt ratios matter


Using too little salt can allow harmful bacteria to grow, while too much salt can inhibit fermentation entirely. Sticking to the recommended ratios (1.5–2% for dry salt, 5% for brine) ensures a safe environment for beneficial bacteria to thrive.
